This week for What's Cookin', I wanted to make that traditional Thanksgiving side dish, mashed potatoes! I'm sure many people already know how simple it is to make delicious homemade mashed potatoes, but I remember how many years I personally made instant mashed potatoes because I didn't know better, and wanted to share the knowledge for anyone who was in my shoes. Additionally, something else I discovered quite recently is that cream cheese or sour cream can really add a delicious taste to your potatoes!

Mashed Potatoes

Ingredients:

3 pounds of potatoes, half Russet and half Yukon Gold - roughly 4-5 Russet potatoes and 6-7 Yukon Gold ones

1 cup of milk

1 stick of butter (8 oz.)

Salt & Pepper

Optional: 4 oz. cream cheese or 1/2 cup sour cream

 

Recipe:

1. Wash and cut your potatoes into chunks that are 1-2-inches. You may peel the potatoes or leave the skin on, whatever your personal preference.

2. Put the potatoes into a pot and fill with water until about an inch above the potatoes. Add salt and set the heat to high. Once the water starts boiling, lower the heat to maintain an even boil, and cover for 12-15 minutes. The potatoes will be done when a fork or knife can penetrate straight through with no resistance.

3. While the potatoes are boiling, combine the butter and milk with 2 heaping teaspoons of salt, and heat until the butter is melted, either in a saucepan on the stove or in the microwave.

4. Once the potatoes are done, pout the potatoes into a colander in the sink to drain the water, put the pot back onto the stove over low heat, and cook the potatoes for another minute to get all the extra moisture out. Be sure to shake the pot the entire time to keep the potatoes from burning on hot bottom of the pot. Remove from heat entirely.

5. Using a masher, mash the potatoes until they are the consistency you desire. Add half the milk and butter, then stir with a spatula to mix. Once the liquid and potatoes are just barely mixed, repeat with the remaining half. Do not over-stir the potatoes, it will ruin the texture.

6. Add the remaining ingredients - more salt & pepper to your taste, the sour cream, or the cream cheese, and fold the potatoes until fully mixed.

7. Serve with butter or gravy and enjoy!
