This week Mr. Mark is cooking a fun snack the Foley family has just started making this year, Fried Summer Squash! Great as a snack or a side with a meal, try it with ranch dressing as a dip!
Ingredients:
1 summer squash
2 tablespoons corn meal
1 tablespoon all-purpose flour
Spices to taste - I use ginger, rosemary, red pepper, salt, and pepper
Steps:
1. Mix corn meal, flour, and spices into a gallon bag
2. Cut the summer squash into chunks
3. Put the squash into the bag, shake thoroughly, and allow to sit for at least 15 minutes, shaking occasionally
4. Over medium heat, cover the bottom of a pan with vegetable oil. Place all the squash into the pan, and cook for 2-3 minutes, until breading is golden-brown. Flip and repeat for other side.
5. Remove from the pan, allow to cool, and it's ready to serve!
