This week I'm doing a really tasty, but surprisingly easy, variant of cheeseburger called the smash burger, as well as a special sauce to go with it as good as anything you'll find in a restaurant!

Ingredients:

Ground beef, preferably 80% lean

Sliced American cheese

Salt & Pepper

1/4 cup mayonnaise

1 tbsp. ketchup

1 tbsp. mustard

1 tbsp. relish

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1/2 teaspoon paprika

Recipe:

1. Mix the mayonnaise, ketchup, mustard, relish, onion powder, garlic powder, and paprika in a bowl to make your special sauce.

2. Shape 1/4 lb. of ground beef into a round ball.

3. Take a thick stainless steel pan or a cast-iron pan and cover the bottom with a thin coat of vegetable oil, then heat over medium heat. Optionally, you can also melt a pat of butter in the bottom of the pan.

4. Drop your ball onto the pan, then immediately flatten with a wide metal surface. It's a good idea to use the handle of your spatula to press down on the surface to get enough pressure.

5. Season the patty with salt & pepper, and allow it to cook until the sides are completely brown, approximately 1.5-2 minutes. Flip, season again with salt & pepper, then place your cheese slice if you want a cheeseburger. Cook for another 30 seconds, or until the cheese is droopy. Remove from the pan and scrape any remaining meat from the pan before adding the next patty. Repeat for as many burgers as you like.

6. Place the patty onto a bun smeared with your special sauce, add any toppings you desire and enjoy!

Try slightly toasting the bun or putting more than one patty into a burger to really enhance the taste!
