Grilled Octopus: 5 pounds of octopus (remove beak), 10 allspice berries, 8 cloves of garlic, 4 bay leaves, 1 tablespoon of thyme and 2 more teaspoons of thyme for the marinade, 1 1/2 cups of balsamic vinegar, 1 cup of olive oil, 1 tablespoon of capers, 1 tablespoon of Mediterranean oregano leaves, 3 tablespoons of lemon juice, 2 tablespoons of parsley, salt and pepper to taste
