Miso Glazed Chicken with Vegetable Rice: (4) 3 oz. chicken breasts, 1/2 cup of miso (soybean) paste, 1/4 cup of sugar, 1/4 cup of red pepper, 1/2 cup of shredded carrots, 2 cups of jasmine rice + 2 cups of water/chicken broth, 1/4 cup of rice vinegar, salt, tamari soy sauce,1 tablespoon of grated ginger, 1/4 cup of chicken broth, 1 cup of shredded napa (Chinese) cabbage, 1/4 cup of mirin (sweetened sake)
